I also get aluminum roasting pan as deep as i can find and use it as a cover over the bird. I place bamboo skewer along the side and piecing the bottom so that they hold it up off the turkey and allow air to flow under the cover. I do this mostly to keep out of trouble with my wife who really doesn’t like the idea of uncovered meat in the refrigerator.
